Just following the basic law avoid fermented wheat, oats, rye, barley and spelt is all one has to follow.

If one were making things from scratch, that would indeed be the case. But there's so much processing, and so many additives added to things nowadays, it's hard to be sure about anything. As you yourself pointed out to me, even flour can be chomeitzdik.
